How far is the distance with the trunk closed to the back of the drivers seat?

Honestly, that will depend on the size of your skis, therefore I'm not too sure.

And those look to be cross-country skis (Do they still call them that, or are they Nordic skis now?) which are normally longer than recreational downhill skis eh?

my 170 cm volkls fit perfectly behind my driver's seat with the back "40" down. And the Thule fat boy adaptors for the ski racks off my cherokee fit with very little adjustment (my boys ride 188s)...

do your volkls take up the entire space?

not quite - that's laying them flat straight back behind the driver's seat. Probably get a 175 or so to do the same thing.
